The flower spikes sent out by yuccas can be surprising. This little 3 foot Thompson's yucca in our backyard has a 3.5 foot spike! Yuccas need dry soil and air (otherwise they will rot), and full sun. The different species vary quite a bit in hardiness; Thompson's yuccas are hardy to -20F and are native to northern Mexico, southwest Texas, and southeast New Mexico. The leaves are ridiculously sharp.
